Advanced Culinary Arts
This course is for the future leaders of the Culinary Industry. It covers all major theoretical, practical and workplace components of kitchen operations, culinary practice and patisserie skill elements. Effective leadership, self development and communication form integral parts of the programme, alongside sustainability and effective management modules.
Requirements: Grade 10 | Maths Literacy | 18 years of age
Professional Chef Programme
The course covers all major theoretical, practical and workplace components of kitchen operations and culinary practice. Including soft skill focuses such as kitchen supervision, self development and communication. Equipping learners to enter the workforce confidently upon completion.
Entry Requirement: NQF 2 | Grade 10 | 18 years of age
Professional Patisserie Programme
This course is for the learner that identifies with meticulous detail and patient practice. The course covers all major theoretical, practical and workplace components of kitchen operations, patisserie practice and the basics of advanced pastry applications. Cost control and the basics of kitchen supervision forms a core focus of the soft skill development aspects.
Entry Requirement: NQF Level 4 | Grade 12 | 18 years of age
Fundamental Chef Programme
This course covers the foundational knowledge aspects associated with entering the food preparation industry. Theoretical, practical and workplace components of kitchen operations and food preparation techniques are the focus.
Entry Requirements: NQF 2 | Grade 10 | 18 years of age
Food and Beverage Services Programme
This programme brings together elements of food and drink preparation and service as well as supervision to develop future hospitality service excellence individuals. The qualification is applicable to all sectors, from small restaurants to large-scale hotels.
Entry Requirements: Grade 11 | NQF 3 | 18 years of age

Short Order Cook Bootcamp
The bootcamp has been created jointly by Capsicum Culinary Studio and Barcelos to fully prepare participants for the high-pressure setting of the quick service kitchen and will equip all attendees with the necessary skills to excel in a short order cooking environment. The bootcamp ensures you are prepared to enter a job in the fast food industry immediately after completion!
